Backup your database before you uninstall !!!
Uninstalling is just undoing the file modifications that you created during the installation and deleting the MKPortal database tables. I don't know that it's really even absolutely necessary to uninstall the database tables.
Files:
Get out the MKPortal install instructions and they will show you what IPB files you modified. Do you have any mods installed on your forum besides MKPortal? If not then you could just overwrite the changed files with the default IPB files. If you have other mods you will need to undo your MKPortal additions manually.
Database:
If you want to uninstall the database tables make a backup of your database first in case something goes wrong. Then, if you have PhpMyAdmin, you can navigate to the forum database (whatever you named it) and you should see a list of database tables.
In my installation I kept the default table prefixes for IPB and MKPortal. All of the MKPortal tables have the "mkp_" prefix" in my installation while the forum tables have the "ibf_" prefix. It may be different in your installation. In PhpMyAdmin you can just check the boxes beside the tables you want to delete and then select "drop" from the dropdown box at the bottom.
